She will make her classic prawn dipping sauce and then make three easy dishes: Prawn rolls with crispy potato chips, classic prawn cocktail, fresh prawn salad.

BEST EVER PRAWN DIPPING SAUCE(and three ways to use it)

This sauce is a bit like a love child of tartare, thousand island & Marie rose sauce.

Its loaded with punchy flavours like dill, capers & pickles which compliments the sweet prawns perfectly.

Prep time: 5 minutes

Ingredients:

  • 1 cup good quality mayonnaise
  • ¼ cup tomato sauce / ketchup
  • 1 tbsp American mustard
  • 1 tbsp Eschalot, finely diced
  • 1 tbsp capers, rinsed, chopped
  • 1 tbsp cornichons, chopped
  • ¼ cup dill sprigs, chopped
  • Zest and juice of ½ small lemon
  • 1-2 splashes Tabasco sauce (optional)

Method

Combine all the ingredients in a bowl along with a pinch of salt and pepper. Stir util well until combined before serving in a dipping bowl.

*Will keep for 4-5 days in the refrigerator

PRAWN, POTATO CHIP & LETTUCE ROLL

This can also be done in a long baguette.

Serves 4

Ingredients

  • 24 Large Tiger prawns, peeled, de veined
  • 2 cups of plain potato chips
  • 8 lettuce leaves , washed, dried
  • 4 soft white rolls, cut int half horizontally
  • 50g softened butter
  • 4 heaped tablespoons of best ever dipping sauce

Method

Spread the butter onto both sides of the cut rolls. Layer in the lettuce, potato chips and prawns onto each roll. Spoon over a generous amount of the dipping sauce before serving.

PRAWN COCKTAIL SALAD

Serves: 4

Ingredients

  • 3 baby gem lettuce, washed, cut into wedges
  • 1 large avocado, peeled, sliced into 8 wedges
  • 4 baby cucumbers, sliced into long wedges
  • 16 Large Tiger prawns, peeled with tail left on
  • ½ small lemon
  • Sea salt and pepper to taste
  • 4 tablespoons Best ever dipping sauce
  • 3 radish, sliced into thin rounds
  • 1 tablespoons extra virgin olive oil
  • ¼ cup dill fronds to garnish

Method

1 Arrange the lettuce onto a serving platter along with the avocado and cucumber.

2 Layer on the prawns then squeeze over a small amount of lemon juice.

3 Spoon over the dipping sauce then scatter over radishes, a small pinch of salt, pepper, olive oil and dill fronds before serving.

DIY PRAWN COCKTAIL TOWER

Serves: 4-6

This is more of a serving or display idea for the Christmas table.

Aussies love serving a big bowl of prawns at Christmas, so this is a way to elevate the presentation.

A fun way to serve prawns this year if readers want to do something more exciting than just putting in a bowl on the table.

Ingredients

  • 1kg cooked large tiger prawns
  • 2 lemons to serve
  • ½ bunch flat leaf parsley
  • 4 cups ice to serve
  • 1 cup of best ever dipping sauce

Method

Bring several different sized bowls.

Stack up with ice, prawns, lemon and bowls of the dipping sauce.
