Easy mango recipes: make these chewy fruit roll-ups and creamy matcha drinks at home

Mango matcha

- 1/4 cup fresh Kensington Pride mango pulp
- 1/2 cup milk of choice
- 1/4 cup hot water
- 1 tsp matcha
- 1 tbsp honey or sweetener of choice
- Ice
Method
- Finely chop and mash the mango; set aside.
- In a small bowl, whisk matcha with 2 tablespoons of warm water to form a smooth paste. Add the remaining water and whisk until frothy.
- In a glass, layer the mashed mango and sweetener. Fill with ice, pour in the milk, then top with frothy matcha.
- Stir and enjoy with a wide straw to sip up the juicy mango bits.

Mango roll-ups
Fruity, chewy and the perfect lunchbox snack!
Ingredients
- Flesh of 3 fresh Kensington Pride mangoes
- 1/3 cup strawberries, halved
Method
1 Preheat the oven to 80C.
2 Cut the cheeks of the mangoes around the pip and remove the skin.
3 Using a food processor, place mango flesh and strawberries in and blend to a paste. Try not to have any thick chunks of fruit.
4 On a lined baking tray, pour the mixture and spread out evenly. Aim for 0.5cm in height.
5 Leave to bake for 2 hours. Check during baking.
6 When the mixture is dry, take it out of the oven and leave to slightly cool so it can be rolled.
7 Cut the mango into long strips and roll each piece.
8 Store in the fridge and take to work or pack into lunch boxes.
