How to make Depinder Chhibber’s paneer kathi rolls, to bring yummy Indian street-food flavour to your table

Depinder Chhibber is a cook, content creator and TV personality who has appeared on both the Australian and Indian versions of MasterChef. She shares how to make paneer kathi rolls — flatbreads with grilled paneer (cheese) and pickles and vegetables inside.

- 4½ tbsp water
- 1 tbsp ghee, softened
- ½ tsp caster sugar
- ¼ tsp salt
Method
- Mix all ingredients in a stand mixer and knead into a semi-soft dough.
- Once the dough has come together, wrap in cling film and set aside to rest for 20 to 30 minutes.
- Divide the dough into balls (roughly 4cm in size). Using flour, roll these out and cook them in a pan, brushing them with ghee once they are cooked.
- Keep these aside covered in a tea towel to keep them soft.
Pickled onions
Ingredients
- 1 cup white wine vinegar
- 3 tbsp caster sugar
- 5 black whole peppercorns
- 1 red onion, sliced thinly
Method
- Mix together caster sugar and vinegar in a bowl until the sugar dissolves.
- Add the sliced onion and set aside for 30 minutes.
- Drain well to serve.
Green chutney
Ingredients
- 1 bunch mint, leaves picked
- 1 bunch coriander, leaves picked
- 2 green chillies
- 5cm piece ginger
- 3 tbsp yoghurt
- Juice of ½ lemon
Method
- Place ingredients into the canister of a stick blender and process until smooth.
- Season with salt to taste.
- Transfer to a small serving bowl and set aside in the fridge.
Masala paneer
Ingredients
- 1 block paneer
- 2 tbsp mustard oil (vegetable oil or any other neutral oil is fine too)
- 1 tsp Kashmiri chilli powder
- 1 tbsp coriander powder
- 1 tsp cumin powder
- ½ tsp amchur (dried mango powder)
Method
- Mix the above ingredients, then add the paneer.
- Pan-fry or air-fry the marinated paneer until brown and keep it aside for the kathi roll.

How to serve
Ingredients
- Ghee, melted
- Eggs
- 1 small carrot, julienne
- 1 small capsicum, julienne
- Fresh coriander leaves
Method
- For assembly, cook an omelette and add some cheese and a wrap, tortilla or roti on top.
- Flip it over and transfer onto a plate.
- Spread some coriander chutney, place the paneer, sliced onions, vegetables and fresh coriander.
- Sprinkle with a pinch of chaat masala (optional) and serve warm.
