Turkish-style eggs are a high-protein breakfast dish featuring poached eggs served on a base of Greek yoghurt mixed with garlic, lemon zest, smoked paprika, cumin, cayenne pepper and fresh dill.

Turkish-style eggs

Ingredients

  • 4 eggs
  • 1.5 cups Greek yoghurt
  • 1 garlic clove, minced
  • 2 tsp lemon juice + 1 tsp zest
  • 1 tsp olive oil
  • 1.5 tsp smoked paprika
  • ½ tsp cayenne pepper
  • ½ tsp cumin
  • Salt and black pepper
  • Chopped dill
  • 2 tsp chilli oil (optional)
  • 2–4 slices sourdough, toasted

Method

1 In a bowl, mix yoghurt, garlic, lemon juice/zest, paprika, cumin, cayenne, olive oil, salt and pepper. Set aside.

2 Boil or poach your eggs to your liking.

3 Spread yoghurt on toast, top with eggs, drizzle spiced oil and chilli oil (if using), and sprinkle fresh herbs.
