Sarah Di Lorenzo: Four mince recipes that are healthy - and delicious

Sarah Di Lorenzo gave mince a healthy makeover when she visited the Sunrise kitchen, showing families how to get creative with the staple.

The clinical nutritionist showed her recipes for Thai-inspired lemongrass and chicken wraps, spicy beef mince with greens, Greek lamb and feta rissoles and healthy quesadillas.

Lemongrass chicken wraps

Serves 5

Ingredients

  • 2 teaspoons of olive oil
  • 2 tablespoons of lemongrass
  • 2 cayenne chilli chopped
  • 2 tablespoons of fresh ginger
  • 5 cloves of garlic
  • 1 kg of chicken mince
  • 1 can of chickpeas drained
  • 500 grams of green beans
  • Juice of 1 lime
  • 2 tablespoons of fish sauce
  • 2 tablespoons of maple syrup

Garnish

  • 2 tablespoons of dices red onion
  • Fresh mint
  • Fresh coriander
  • Mini cos lettuce to serve in.

Method

  1. Heat the oil in a pan and add the lemongrass, chilli, garlic, and ginger.
  2. Add the chicken and cook until brown.
  3. Add the fish sauce, maple, and lime — combine.
  4. Add the chickpeas. Combine.
  5. Spoon into the cos lettuce leaves, add the garnish and enjoy.

Spicy beef mince and greens

Serves 4

Ingredients

  • 2 tablespoons of sesame oil
  • 100 grams of rice noodles
  • 500 grams of mince
  • 2 long chillies deseeded and sliced
  • 2 spring onions
  • 1 tablespoon of ginger chopped
  • 3 cloves of garlic
  • 1/3 cup of chicken stock
  • 1/3 cup of tamari
  • 1/4 cup of oyster sauce
  • 1 head of broccoli chopped
  • 1 tablespoon of maple syrup
  • 1 tablespoon of arrowroot flour
  • 1 cup of snow peas trimmed
  • 1/4 cup of peanuts

Method

  1. Cook the rice noodles in boiling water. Drain.
  2. Add the oil to a pan and cook the beef, ginger, chilli, spring onions, garlic until the meat is cooked. Mix all the sauces together with the arrowroot flour.
  3. Add to the meat. Add the snow peas and broccoli. Cook for only a few minutes.
  4. Serve with the rice noodles and the peanuts for a garnish.

Lamb and feta rissoles

Serves 4

Ingredients

  • 500 grams of lamb mince
  • 2 cloves of garlic
  • 1 teaspoon of cumin
  • 125 grams of Danish feta
  • 1/4 cup of olive oil
  • 1 1/2 cups of wholemeal couscous
  • 1 1/2 cups of boiling water
  • 1 handful of spinach chopped
  • 2 chopped spring onions
  • Zest of 1 lemon
  • Juice of 1 lemon

Method

  1. Add the mice, garlic, cumin, and feta to a bowl, season, and combine.
  2. Shape into rissoles. Heat the oil in a fry pan and cook the rissoles.
  3. Add the couscous to the boiling water and let stand for 5 minutes, add the spinach, lemon zest and juice plus onion. Season and combine.
  4. Serve with the rissoles.

Homemade healthy quesadillas

Serves 4

Ingredients

  • 300 grams of beef mince
  • 1 teaspoon of ground coriander
  • 1 teaspoon of black pepper
  • 1 teaspoon cumin
  • 1 teaspoon of chilli
  • 4 cloves of garlic
  • Juice of 1 lemon
  • 1 chopped spring onion
  • 2 chopped capsicums
  • 1 chopped carrot
  • 1 chopped zucchini
  • 1 cauliflower sliced
  • 1/2 chopped parsley
  • 3/4 cup of mozzarella
  • 1 tablespoon tomato paste
  • 1 teaspoon of extra virgin olive oil
  • 4 whole grain tortillas

Method

  1. Cook the beef with the herbs and spices. Add the vegetables and garlic and cook for 5 minutes. Stir in the tomato past and lemon juice.
  2. Remove from heat and add the parsley.
  3. Spread the mix over a tortilla add the chillies and toast in non-stick pan and serve.
