LEMON TWIST BISCUITS

Ingredients

  • 4 eggs
  • 250g sugar
  • 500g self-raising flour
  • 1 lemon, zested
  • 2 tablespoons lemon juice
  • 125g butter, melted
  • 2 teaspoons vanilla sugar (or essence)
  • 2 teaspoons baking powder
  • Extra self-raising flour for dusting

Method

1 Whisk eggs in a bowl. Add lemon zest and lemon juice and whisk.

2 Add sugar and whisk. Then add melted butter and whisk.

3 Add vanilla sugar, baking powder and whisk.

4 Add self-raising flour and whisk until combined.

5 Dust the benchtop with flour and knead until the dough is springy.

6 Slice two small pieces from dough and roll out each piece into a rope (1-2cm wide each)

7 Entwine the two pieces of rope dough. Cut off the rough ends. Continue until all the dough is used.

8 Place on a lined baking tray. Bake in oven at 180°C fan-forced for 30 minutes, or until golden.
