A friend said Watson was just a few hundred metres away when he was struck.
“I was waking up at 5am and we all wanted a coffee and there was no milk, so Col and his mate went down to the shop and he never (came) back,” she told 7NEWS.
His friend remembered him as someone with a “big heart”.
“He’d help anybody,” she said.
The Mercedes allegedly drove away before emergency services arrived and was later found at an address on Boonenne Ellesmere Rd in the nearby town of Taabinga.
A 30-year-old man was taken into custody and charged with one count each of dangerous operation of a vehicle causing death, driving of a motor vehicle without a driver’s licence and failure to remain at an incident and render assistance.
He is due to appear before Murgon Magistrates Court on Wednesday.
“The manner of driving is a major consideration in terms of what we’re looking at right now,” Inspector Scott Stahlhut previously said.
Investigations are ongoing.
