Crispy, sticky pork belly piled onto fragrant rice and loaded with fresh veggies, this is the kind of midweek dinner that feels indulgent but couldn’t be easier.

Using simple ingredients and an air-fryer shortcut, it’s a family-friendly meal packed with bold flavour and ready in just half an hour.

Ingredients
- 2 tsp salt
- 2 tsp garlic powder
- 1 tbsp chinese five spice
- 1kg pork belly, cut into bite-sized pieces
For the sauce
- 2 tbsp dark soy sauce
- 2 tbsp honey
- 1 tbsp oyster sauce
- 1 tsp crushed ginger
- 1 tsp crushed garlic
- juice of 1 lime
- 1 tsp chilli powder (optional)
Method
- Combine the salt, garlic powder and five spice. Then, toss your pork belly pieces with the spice mix.
- Arrange your spiced pork belly pieces in your air fryer in one layer. Don’t worry if you can’t fit them all at once, you can always do a second batch.
- Set the temperature to 200C and the time for 15 minutes, then cook, giving them a shake halfway through to ensure even cooking.
- While your pork is sizzling away, get started on the sticky sauce: whisk together the sauce ingredients in a large bowl to combine.
- When your pork belly bites are crispy and golden, toss in the sticky sauce, so every piece is sticky and shiny. Return them to the air-fryer basket. Set the temperature to 200C and the time for 5 minutes, then cook until sticky and glazed.
- Serve straight up or turn into dinner magic!
Sticky Pork Belly Rice Bowls
- Divide 450g reheated microwave rice among four bowls.
- Arrange 1 cup grated carrot, 1 diced cucumber, 1 cup corn kernels and hot sticky pork belly bites on top.
- Add soft-boiled or poached eggs (optional) if you’re feeling fancy and finish with a drizzle of Kewpie (Japanese mayonnaise) and a sprinkle of green onions.
