CHICKEN SKEWERS WITH GREEN BEANS AND CURRY SAUCE
Serves 2
Cooking time: 25 mins
300g chicken thigh
1 tbsp rice bran oil
100mL light coconut cream
¼ brown onion
1 clove garlic
1 tbsp coconut or olive oil
1 tbsp green curry paste
Small handful coriander root
150g green beans
¼ red cabbage
1 lemon
Small handful coriander leaves
125g basmati rice
Method
1 Prepare chicken: Cut chicken thigh into even sized chunks. Season with salt and rice bran oil. Thread onto skewers.
2 Cook chicken: Heat griddle pan to high. Add chicken skewers and lemon slices into halves. Cook until golden brown (approximately 3-4 minutes per side)
3 Make sauce: Finely chop onion, garlic, and coriander roots. Sauté in a pan with coconut oil until translucent (approximately 3-4 minutes). Add curry paste and 1/3 cup water, simmer until reduced. Add coconut cream and simmer for 4-5 minutes.
4 Prepare sides: Cook rice as per package instruction. Finely slice red cabbage.
5 Finish sauce: Optionally blend curry sauce with a stick blender.
6 Serve: Pour curry sauce onto plate. Add chicken skewers, green beans, cabbage, charred lemon, and rice. Garnish with coriander leaves and fresh chili.
EGG MUFFINS
Serves: 2
Cooking time: 20 mins
6 free range eggs
150g smoked leg ham
100g cottage cheese
1 tsp butter
Sourdough toast
Method
1 Preheat oven: Preheat oven to 180 degrees Celsius. Lightly grease small muffin tins with butter.
2 Prepare muffin mixture: Roughly chop ham. Crack eggs into a bowl and generously whisk
3 Fill muffin tins: Place chopped ham evenly across muffin tins. Add 1 generous teaspoon of cottage cheese in each. Season eggs with salt, then pour into each muffin tin.
4 Bake muffins: Add to the oven and cook until lightly golden (approx 11-13 mins)
5 Serve: Toast sourdough and cut into soldiers to serve on the side or put in an airtight container for snacking on the go.
