The AFL season has kicked off and footy fans have a delicious new way to celebrate the start of the season, with tacos emerging as the perfect feast for the whole family.

Michael Weldon shared his Mexican-inspired recipes, designed specifically for footy fans who want easy, handheld food while watching the game.

  • 500g 3 star beef mince
  • 1 onion, diced
  • 1tbs cumin
  • 1tbs coriander powder
  • 1tbs smoked paprika
  • Olive oil
  • Sea Salt

Grilled Chipotle Chicken Tacos

  • 600g Coles Chicken Stir Fry Strips
  • 2tbs Chipotle in adobo sauce
  • 1tbs smoked paprika
  • 1tsp salt
  • 1tsp dried oregano
  • 1tsp black pepper
  • Olive oil

Guacamole

  • 4 avocados
  • 1 garlic clove, grated finely
  • 2 limes
  • Sea salt

Pineapple salsa

  • ½ pineapple, diced
  • 1 small red onion, diced
  • 1 cucumber, diced
  • 1 red chilli, diced
  • 1tbs olive oil
  • Sea salt

Pico De Gallo

  • 2 tomatoes, diced
  • 1 small white onion, diced
  • 1 jalapeno, diced
  • 1/4 bunch coriander, chopped finely
  • 1 lime Juice
  • 1tbs olive oil
  • Sea salt

Lime Crema

  • ½ cup sour cream
  • ½ cup mayo
  • 1 lime, juice
  • 1tsp green hot sauce(optional)

Garnish

  • Coles Pineapple salsa
  • Coles creamy salsa Verde
  • Pickled jalapenos
  • ½ white cabbage, shaved serve in bowl
  • 12 flour tortillas, heat following packet instructions
  • 12 hard shell tortillas, heat following packet instructions
  • 2 Limes, cut into 8
  • Hot sauce

Method

  1. In a bowl combine the chipotle chicken marinade. Marinate the chicken for 30mins – 12hours.
  2. In a large frypan cook the onion in olive oil, once browned add in the mince and brown off. Add in the spice and toast off. Add in ½ a cup of water and cook until tender. Keep hot for serving.
  3. Heat a griddle pan or BBQ, cook the chicken strips on the bbq until charred on both sides and cooked through. Keep warm for serving.
  4. In a bowl mash the avocados until smooth. Add in the garlic and lime, season to taste with sea salt. You can add any other things into the guacamole at this stage. Serve in a sharing bowl.
  5. In a bowl combined the Pico de Gallo ingredients and mix. season with salt to taste. Serve in a sharing bowl.
  6. In a bowl combine the pineapple salsa ingredients and mix. Season with salt to taste. Serve in a sharing bowl.
  7. In a bowl combine the crema ingredients and mix. Season with salt to taste. Serve in a small bowl.
  8. To serve arrange all the different taco ingredients sharing style and let dinners build their own tacos then enjoy in front of the footy!
