Crispy, lemony lamb chops in minutes: Steph De Sousa’s no-stress air fryer dinner

If you’re after a quick, flavour-packed dinner that tastes like it took far more effort than it actually is, Steph De Sousa’s souvlaki-style lamb chops might be your new go-to.
The “air fryer queen” is serving up a simple Greek-inspired recipe that delivers juicy, garlicky chops with a zesty lemon hit, all cooked in under 15 minutes using the air fryer.
With a quick marinade of olive oil, garlic, oregano and lemon, the lamb is transformed into a crispy, golden dinner, paired with a creamy garlicky yoghurt that balances out the richness.

SOUVLAKI-STYLE LAMB CHOPS
Ingredients
Serves 4
Prep & Cook Time: 20 mins
- 2 tbsp olive oil
- 2 tbsp crushed garlic
- 1 tbsp dried oregano
- 2 tsp salt
- Juice of 1½ lemons
- 6 lamb loin chops
- To serve: Lemon wedges, lettuce, mint and cucumber
For the Garlicky Yoghurt
- 1 cup Greek yoghurt
- 1 clove garlic, crushed
- 2 tbsp chopped mint
- 1 tsp salt
- Juice of ½ lemon
Method
- In a large bowl, pop the olive oil, garlic, oregano, salt and lemon juice and give it a good whisk. Add your chops and give them a massage so they’re covered in all that garlicky, herby goodness. If you’ve got time, let them marinate for 30 minutes or refrigerate for up to a day. If not, don’t worry, they will still be yum!
- Preheat your air fryer to 200C. Pop the chops into the basket in a single layer and set the timer for 10 minutes, flipping halfway through. Check to see if they are how you like them, juicy or golden brown! For more golden chops, reset the timer for a further two minutes.
- While they’re cooking, in a small bowl, stir together all the garlicky yoghurt ingredients.
- Serve your chops hot with a generous dollop of yoghurt sauce, lemon wedges, lettuce, mint and cucumber.
