Get a taste of takeaway with these healthy recipes by ‘fakeaway’ food queen Lucinda Porcelli

Lucinda Porcelli is a highly sought-after weight loss nutritionist known for her clever “fakeaways” — healthy, homemade versions of popular takeaway meals.
She recently shared three such recipes on Sunrise so you can enjoy that fast food flavour at home, without the guilt.
Her Peri Peri Chicken Pizza is inspired by Nando’s, while her Cheeseburger Pizza gives off Big Mac vibes — only healthier. And if that’s not enough, her Cheeseburger Bowl makes the perfect use of any leftovers.

Cheeseburger Pizza
Nutrition: 558kcal, 34g carbs, 21g fat, 56g protein, 570mg sodium Prep time: 5 minutes Cook time: 15 minutes
Mince ingredients (makes 5)
- 500g extra lean beef mince
- 1 tsp onion powder
- 1 tsp garlic powder
- ½ tsp paprika
- 1 tbsp yellow mustard
- 1 tsp tomato sauce
Burger Sauce ingredients (makes 2):
- 30g Chobani Greek yoghurt
- 10g American mustard
- 10g Mingle tomato sauce
- 20g pickles, diced
- 30ml pickle juice
Topping ingredients (makes 2)
- 1 Coles low-carb, high-protein pizza base
- 50g Coles tomato pizza sauce
- 100g cooked beef mince
- ¼ brown onion, finely chopped
- 50g mozzarella cheese, grated
- 20g Coles special burger pickles
Method
- Preheat oven to 170C.
- Heat a non-stick frypan over medium heat and spray with olive oil. Add mince and cook until browned.
- Stir in onion powder, garlic powder, paprika, mustard and tomato sauce. Cook for a few more minutes, then remove from heat.
- Spread pizza sauce evenly over the base.
- Top with cooked mince, chopped onion and grated cheese.
- Bake until the base is crisp, about 10 minutes.
- Meanwhile, combine all burger sauce ingredients in a small bowl. Transfer to a zip-lock bag and snip the corner to use as a piping bag.
- Once pizza is out of the oven, drizzle sauce over the top in a zig-zag pattern.
- Garnish with pickles and serve immediately.
Peri Peri Chicken Pizza
Nutrition: 524kcal, 34g carbs, 24g fat, 43g protein, 489mg sodium Prep time: 5 minutes Cook time: 15 minutes
Ingredients
- 1 Woolworths high-protein pizza base
- 80g Leggo’s Rustic Thick & Chunky Passata
- 20g baby spinach
- 45g Coles mozzarella cheese, shredded
- 80g cooked chicken breast, shredded
- 20g red onion, finely diced
- 15g Nando’s Mild Perinaise
- 5 fresh basil leaves
- Pineapple (optional)
Method
- Preheat oven to 180°C.
- Line a baking tray with baking paper and place the pizza base on top.
- Spread passata evenly over the base.
- Top with spinach, shredded cheese, chicken, diced onion and pineapple if using.
- Bake until the cheese is melted and the base is crispy, about 15 minutes.
- Remove from oven, drizzle with Perinaise and top with basil leaves. Serve immediately.
Burger Bowl
Nutrition: 467kcal, 19g carbs, 19g fat, 40g protein, 532mg sodium Prep time: 5 minutes Cook time: 15 minutes
Ingredients
- 100g Birds Eye Sea Salt & Rosemary Chips
- 125g cooked beef mince (from Burger Pizza recipe)
- 20g mozzarella cheese, grated
- 60g iceberg lettuce or ranch salad mix
- 50g cherry tomatoes, quartered
- 25g Coles special burger pickles
- 20g onion, finely chopped
Burger Sauce ingredients
- 40g Chobani Greek yoghurt
- 15g American mustard
- 15g Mingle tomato sauce
- 15ml pickle juice
- 10g Coles special burger pickles, finely chopped
Method
- Preheat oven and cook chips following packet instructions.
- Heat a frypan with a small amount of olive oil and reheat the mince if needed.
- Top the mince with grated mozzarella and let it melt slightly.
- In a small bowl, mix all burger sauce ingredients until smooth.
- In a serving bowl, toss together lettuce, tomatoes, pickles, and onion.
- Add the cooked chips and cheesy mince on top, then drizzle with burger sauce. Serve straight away.
